Since ancient times, women who dedicated themselves with care and dedication to rolling out the dough, the fundamental basis of traditional pasta dishes, were called ‘sfogline’. At Christmas 1956, in Bologna, the filmmaker Carlo Fuzzi documented this ancient art. Through the window of a shop, he filmed some sfogline intent on working the dough with skill and precision.
