From 1958, in Montefiascone, the yearly "Wine Fair" is held; tastings, historical reenactment intertwine recalling the events, and the legend, that since year 1500 spread throughout the town, the country and Europe. It is told that in XII Century Bishop Giovanni Defuk (the name is a result of errors through the years) was coming to Italy, headed Rome. It is also told that, out of his will and desire for libations, he sent out as a vanguard a trusted person to pinpoint the locations where good wine was sold. In such a casem the servant would leave a written sign, "Est" (from latin, "there is"), on the taverns' doors, so that the bishop could see it and stop to drink some good wine. Come to Montefiascone, he wrote it for three times: "EST EST EST", and the bishop, due to the quality of the wine, stopped in town for the following years, where he died, indeed, for too much drinking.
